About this photo: New Orleans is about, among other things, good food. We availed ourselves of the chance to find out how to cook some of the specialities at a cooking class held in the French Quarter. The menu that day included the ccreole standby Red Beans and Rice, traditionally fixed on Monday, which was the day for washing. The beauty of the dish is that it mostly cooks itself, requiring only an occassional stir. This photo shows Linda doing her part by making sure the beans aren't sticking to the bottom of the pot while the chef works on another batch. |
