With the success of the previous remodeling, Charles and Amy took on a new project: upgrading the full bath. The result is as good as the kitchen, with much more space for storage and a good shower. Kai appreciated the addition of the shower, with controls he can reach easily, and has given up tub baths for good.
Charles and Amy continued their tradition of Iron Chef Parties again this year. We were invited to attend and bring a dish using cashews. After searching the net for something that didn't involve cashew butter or stir frying, we settled on a marvelous recipe from Cooks Illustrated for Citrus and Spinach Salad. This included roasted cashews as a topping. Linda ordered Jim to produce a one page explanation of the dish, including the fact that it combined the best of California and Texas. Surprisingly, our entry didn't win. However, the salad was so good that we have added it to our repertoire.
Charles continues to work four days a week at NCSE, while Amy works as a Women's Health Care NP and Nurse Midwife. She has delivered 1040 babies in her career. Her record is seven deliveries in one 12-hour shift!
